The Ca'Rugate winery is located north of the village of Soave. Ca' Rugate takes its name from Rugate Hill. Most of Ca' Rugate's vineyards are located on this dark, volcanic soil of this hill. The Tessari family, now the fourth generation, makes wines that are based on history and tradition. Wines with precision and the character of the volcanic soil. In addition to the high-quality range of Soave's with international fame, Ca' Rugate also makes very stylish and refined Valpolicella wines.
The best grapes from the hilly area of Montecchia di Crosara are used for this wine. The soil consists of limestone and gravel.
Traditional fermentation of Valpolicella grapes from the same harvest year. The wine is then fermented again together with the pulp obtained after pressing the Amarone. This method is called 'Ripasso' because the grapes go through the fermentation process one more time. This causes the wine to gain enormous flavor and structure. After fermentation, 50% of the wine matures for 8 months in tonneaux (large oak barrels), the other 50% in stainless steel tanks.
