Description
Power and finesse are equal here, a truly great wine. This is a tiger waiting to strike: gentle and slender, its strength almost palpable yet velvety soft. This wine is an explosion of black fruits: cassis, blackberries, black cherries and notes of roasted coffee, fully expressed in a beautiful lingering finish.
The grapes are harvested by hand and come from blue clay soils with a surface of Urgonian limestone and 'galets roulés', also known as puddingstones. The south-east facing terroir enjoys the rising sun. After harvesting, the grapes are destemmed, crushed and cold soaked for 12 to 48 hours.Alcoholic fermentation is initiated by indigenous yeasts for 25 days at moderate temperatures (24-28°C) for about 20 days. The wine is aged in concrete tanks and new 500 liter barrels for 9-12 months.
