The name of this grape (Carricante) comes from the Sicilian dialect "u carricanti", which means "heavily laden" and refers to the large amount of grapes that this vine produces, unless strictly controlled. Carricante is mainly grown on the slopes of Etna, where it has experienced a renaissance in recent years. It thrives particularly well at altitude and is now also grown in other high areas. Carricante has a wonderful acidity and a pronounced minerality.
Cortese Nostru Carricante is grown at around 400 meters above sea level. Because it is so productive, it is essential to pay close attention to training the vines - which is done using the Guillot method. Strict pruning is also absolutely essential to limit production. Grapes are picked by hand, then destemmed and pressed very gently with a pneumatic press. The must is decanted for about 48 hours at low temperature before fermentation begins, which is carried out at 17-19C° for about 20 days. Once fermentation is complete, the wine is racked and kept on the fine lees for at least 5 months, with regular Bâtonnage.
