The Cataratto (50%) and Grillo (50%) grapes are harvested by hand in small baskets and only the best quality is selected to make Vanedda. The baskets of grapes are then kept refrigerated at 10°C for 24 hours. The grapes are then destemmed and fermented on the skins for 2 days. The skins are then separated from the wine and fermentation continues in 30 hl oak barrels. The wine is aged for at least 7 months on the lees and another 6 months in the bottle before the wine is marketed. Vanedda is produced in limited quantities.
