Piedmontese people like to drink bubbles, especially with aperitivos and during the summer months. The area has a surprising amount of high quality offerings, ranging from sweet Moscato, Alta Langa DOCG and dry spumante rosatos made from Nebbiolo.
Some wineries specialize heavily in sparkling wine, while many have just one to add to the range of red wines. This also applies to Fontanabianca. This organic winery specializes in Nebbiolo in particular, where Mateo makes incredibly beautiful Barbaresco's.
Mateo also made this Alta Langa Classe di 91 (Class of 91). His friends wanted him to try making a sparkling wine from another friend's Chardonnay grapes for their high school reunion. The production was extremely small and only for friends, but became so popular that they registered it as an official Alta Langa with 30 months on the lie. Fontanabianca is part of the Green Experience, which means they don't use herbicides or chemicals. There is even a truffle reserve with olive trees planted to preserve the area's biodiversity.
Manual selection of the grapes and subsequent soft pressing. The first fermentation takes place in steel tanks at a temperature of 15 ° C. In the spring, the tirage is carried out with selected yeasts. Second fermentation in the bottle at a temperature of 15°C.
