In color, this Cava Brut Cuvee Especial is a bright straw yellow with brilliant green reflections. A fine persistent bubble can be seen in the glass. In the nose it is fragrant with white fruit aromas with some light syrup notes. It is fresh at the beginning with good acidity. Then it is balanced, creamy and fruity with a long finish.
What makes this Cava special is that it uses old vines with deep-set roots that bring out a lot of flavor. They give this Cava body and depth. The grapes come from Cal Cassanyes, the domain's only vineyard at 150m above sea level. The terroir here is poor with some chalky and sandy loam. This vineyard is grown organically. Fermentation takes place at low temperature to preserve the aromas of the grapes. The grapes are carefully assembled to obtain a fresh, balanced wine. Maturation takes at least 12 months in the bottle.
