The 2021 harvest was characterized by a spring with average, normal rainfall and a hot summer with mild nights, yielding grapes with a perfect balance between the degree of sugar and the phenolic ripeness. The wine is fermented in stainless steel tanks at a controlled temperature for about eight or ten days. Once alcoholic fermentation is stopped, a weekly baton is performed for 3 months before the wine is prepared for bottling. By applying this technique Famila Conesa obtain a wine with a perfect aromatic balance and a mouth with an unsurpassed volume.
Each season plays its own role in the wine cycle of this ancient vineyard and helps the grapes achieve excellent ripeness. The Pago Guijoso vines, where this Chardonnay is grown, are located on the borders of the Parque Natural de las Lagunas de Ruidera, in a natural environment full of life. It provides the perfect conditions for growing the grapes. All grapes have their own soul, according to Familia Conesa. They all carry the Pago Guijoso designation of origin and are packed with taste, aromas, texture and character.
