Stilio is a reference to Salento's ancient cultural tradition of the taranta, which has been rediscovered in recent years. The label shows a stylized diadem spider on a black field. The overall image recalls the symbolism of the spider, of the taranta, whose bite arouses the need for dance, music and colors in a cathartic effect, releasing emotions that could even evoke the taste of this wine. The wine is intense dark red with purple reflections. The wine has aromas of jam made from red fruits, morello cherries and dried plum. The tertiary scents are vanilla and cloves. On the palate it is velvety, full and harmonious. We recommend the wine with grilled beef, game, pot roast and aged cheeses.
The Primitivo grapes come from different municipalities in the province of Taranto. The terroir consists of calcareous clay. The winters here are moderate and the springs and summers very dry. The grapes are rigorously selected and come from vineyards with a low yield. Part of the grapes are crushed on the plant for the production of Stilio and thus undergo a light drying. This makes it possible to concentrate the aromas for harvesting due to the resulting water loss of about 20 to 30%. After harvesting, traditional maceration takes place for 10 to 12 days and fermentation under controlled temperatures, followed by malolactic fermentation. Part of the wine is then aged for 6 months in 1 and 2 year old French oak barrels. Finally, the wine ages for another 2 to 3 months in the bottle.
