The grapes to produce Chablis 1er Cru Fourchaume Domaine Jean Goulley are carefully selected and fermented with natural yeasts in stainless steel vats to show the characteristics of this impressive terroir. Chablis 1er Cru Fourchaume Domaine Jean Goulley matures 18 months sur lie in stainless steel barrels to achieve texture, roundness and complexity. Fourchaume is a Premier Cru vineyard in Chablis.
The soils are rich in clay and limestone with fossilized seashells (fossils); and are known for producing fine wines with mineral properties. The Domaine Jean Goulley vineyard is certified organic. In 1991 the domain became one of the very first certified organic producers in Chablis. All vineyards are grown organically and the wines are produced with limited use of sulfur. Philippe believes that organic farming methods enable expressive and sustainable soil. Their wines are mineral, pure and lively. The soil on which the chardonnay grows fits perfectly with this elegant wine.
