In the vineyard of Cavolo, the corvinone grape variety is common. The soil is poor and stony, yet perfectly suited to growing the vine, which offers limited production per plant and is characterized by strong roots that dig deep in search of those mineral micro-elements that give flavor and structure to the wine. The selected trusses are the thinnest and best exposed. After the harvest, they are dried for about 120 days, after which the vinification takes place. Here, all the precious components retained in the skins are transferred to the wine.Amarone Cavolo matures for 2 years in small oak barrels and then another 2 years in large oak barrels.
