Description
Ottocento is bright straw yellow in color with elegant greenish reflections. A great wine with a fine aromatic character, both floral and fruity, with typical hints of almond shavings, pear, wild flowers and acacia. On the palate, the onset is round and velvety, moderately acidic, dry and well structured. The aftertaste is incredibly persistent and is characterized by the typical and unmistakable hint of bitter almond that is typical of the Tichi grape. Ideal with San Daniele ham and spring vegetables: asparagus, nettle and silene used in risottos and omelets. It also goes very well with shellfish as it has the right minerality to enhance the flavor. Serving temperature is between 16 and 18 ° C in a wide glass.
The grapes come from 80-year-old vines on the south side of Lake Garda, called Tuchì, a wine that gives off a pungent aroma. Silky, mineral, crunchy when young, fleshy and round with aging. Harvesting is done manually here, followed by gentle pressing of the entire cluster in a nitrogen-saturated atmosphere. Maturation sur lie takes place for 7 days, alcoholic fermentation for 16 days. This is followed by maturation in steel tanks on the lees for 6 months and in the bottle for 4 months.
