Cantine Federico Mencaroni mainly grows and processes white grapes, including verdicchio dei Castelli di Jesi (the main vines of Le Marche) and Malvasia or Biancame. They also grow blue grapes, including montepulciano, sangiovese, merlot and cabernet sauvignon.
With organic farming they try to keep the grapes as natural as possible, so that they can fully develop their taste and aroma. They prune the vines short and then thin them out to control and limit the amount of grapes they produce. This creates extra concentration in the bunches that remain on the vine. The progress of ripening is monitored based on a series of technical analyses. In this way the best time for harvesting can be determined. The harvest always takes place manually. Grape production varies every year. Only the best grapes are made into wine.
This Rosso Piceno consists of 70% Montepulciano and 30% Sangiovese grapes.
After the harvest at the end of September, the fermentation of the destemmed grapes takes place in a controlled manner at a temperature of 24°C and a soaking period of 30 days. The wine is then aged for approximately 4 months in a stainless steel tank and then in the bottle for 2 months. In this way the fruit concentrate remains optimal and the wine retains its attractive freshness.
