At Visintini, the manual harvest takes place at the end of August. The vines are pruned according to the Guyot and double Guyot. The vines vary from 8 to 40 years old and grow on a soil of marl and clay.
Immediately after picking, the grapes go to the wine cellars. There, the grapes are separated from the stems and pips. In a steel vat, the wine is kept at 10 to 14 degrees for 12 to 24 hours. This is done to give the wine more structure. The skins remain in the juice, for the volume, structure and copper color that the Pinot Grigio grapes give.
After pressing the grapes, the juice goes into a steel tank again for alcoholic fermentation.
In March, the wine is filtered again and only then is it bottled to leave the winery.
This wine is perfect to serve as an aperitif, with fish, shellfish, salami and hams. This wine can also be served with classic Italian antipasti, such as bruschetta with tomato and Parma ham.
