Description
Originating from various vineyards around Limoux in the Languedoc. Here, a Mediterranean climate prevails, but the Atlantic Ocean provides the necessary cooling.
The grapes are fermented separately at a controlled temperature of 17 degrees. The wine then continues to mature on the lees ('sur lie') for 40 days. This makes the wine softer and rounder.
