The Chotard estate is located on the edge of the village of Reigny, in Crézancy-en-Sancerre, surrounded by a valley of Kimeridgeian clay-limestone marl hills. The plots on these slopes are sunny all day long and the vines planted there are rooted in the springs that flow underground. The juices from these plots are full, round and delicious.
Chotard also has a number of plots on the village plateau, where there is a terroir, which gives the grapes a great minerality.
Finally, the last plots are located on the plateau of Crézancy-en-Sancerre, on Oxfordian cobbles, where very fruity wines are produced.
The vines are worked with as much respect for nature as possible in order to get the best out of the grape varieties and the terroir. The soil is therefore worked from the end of winter, so that it can breathe and weed killers are no longer needed.
The harvest is done by hand by a team of seasonal workers, most of whom are used to harvesting on the estate.
In the cellar, Simon, a qualified oenologist, keeps an eye on his wines and tries to change them as little as possible. Curious by nature, he has set himself the goal of carrying out a wine experiment for each harvest year in order to increase his knowledge of Sauvignon, Pinot Noir and the Sancerre terroir. For example, he has already tested the vinification of his white wines in oak or acacia barrels, in barrels of the same wood, that of his rosé wine in acacia barrels and even the fermentation of his red wines directly in barrels, in order to allow the notes of the wood to blend with the wine.
