The Il Grillo di Santa Tresa spumante brut is a great Sicilian sparkling organic wine. Our enthusiasm started with the beautiful bottle! That makes this wine a party right away. But bubbles from Sicily, that's a bit strange, isn't it? The sparkling wine is made from 100% Grillo grapes. Grillo is a popular grape in Sicily. It has a wonderful bouquet of wild spring flowers, nectarine and white peach. In the aroma fresh crisp citrus. Exactly that citrus contributes to the vitality and balance of the wine. Nice and dry. The wine also has something of roasted nuts in the aroma, like Franciacorta and Champagne can have. The taste is dry and pure, with a refreshing acidity. Perfect if there is something to celebrate. But also to brighten up a boring day. Delicious with antipasti.
Feudo di Santa Tresa has been owned by Stefano Girelli, his sister Marina Girelli and their business partner Massimo Maggio since 2002. When the opportunity arose to purchase the estate, which dates back to 1697, they did not hesitate for a moment. Since then, the estate has been restored to its former glory and is now fully organic and sustainable. This stems from the philosophy of making the estate part of the environment. For example, care is taken to ensure that wild plants and flowers are given the opportunity to grow, which attracts various insects and animals, which in turn ensure natural biodiversity in the vineyards. The estate is located in Vittoria in the south-east of Sicily and has 50 hectares of vineyards, largely on a soil of “Terra Rossa”. A special soil of a layer of red clay, with a thick layer of limestone underneath. The thick layer of limestone acts like a sponge and stores water, so that the vines receive sufficient moisture even in the dry, warm summer. By working with the right grape varieties and a density of 5,000-5,500 vines per hectare, the pruning techniques are simple but well controlled. In addition, the cool southern sea breeze, which compensates for the heat of the interior, does the rest. The natural quality of the grapes is so exceptional that it would be reckless to intervene more than strictly necessary. The grapes of the Santa Tresa estate have therefore been grown organically for many years. In 2006 it was decided to have this officially registered. As of the 2009 harvest, the entire production has also been officially certified as organic wine.
