Originating from selected grapes from the La Melera vineyard, at an altitude of 675 metres (Altos means high in Spanish), with 40-year-old vines on poor soil that give low yields.
Fermentation takes place at a controlled temperature of 28 to 30 degrees for 8-10 days. The juice then remains in contact with the skins for about 10-15 days to extract more colour and flavour. The wine is further matured in French and American oak for 12 months.
