After picking, the grapes are pressed and the juice ferments in stainless steel tanks. The wine then matures in large oak barrels (demi-muids) for 6 months. Every year they renew 25% of these barrels. During the first month, daily stirring of the lees (lie) takes place, also called battonage. The wines of Vacqueyras are mainly red wines, with Grenache often being the leading grape variety in the blends.
