El Viejo has a deep cherry color with violet tones in the edge. Thanks to the applied barrel aging, the wine has a very intense nose with aromas of ripe black fruit, well integrated with the toasted, spiced and smoked notes. Thick and full on the palate with very ripe and round tannins that give it its sweet smoothness. In the long and persistent aftertaste, ripe fruits appear again, perfectly composed with the roasted character of the wood.
El Viejo is made from 100% Tinta de Toro (Tempranillo). The grapes come from strictly selected, ancient vineyards with very limited production. The grapes are manually harvested during the first fifteen days of October and transported in small crates to the wine cellars. The grape fermentation takes place in concrete barrels with a capacity of 10,000 kg. The malolatic fermentation is carried out in new French oak barrels, as is the maturation for 16 months. This wine has not been filtered or clarified using harsh methods to preserve its natural characteristics.
