The grapes are cooled to preserve the fruit aromas. The juice is fermented at a controlled temperature in stainless steel barrels. The skins are removed from the juice as quickly as possible to obtain a white wine from these blue grapes. The wine then matures for a few weeks on the yeast cells ('sur lie'). This softens the wine and gives the wine extra complexity.
