Made from the Negroamaro grape, a variety grown in southern Puglia since the 6th century BC, the wine has a garnet red color with purple hues. On the nose it is broad and intense with aromas of ripe fruit, pepper, tobacco, walnuts in combination with ethereal notes. On the palate it is velvety, full, powerful and harmonious. We recommend pairing the wine with roast red meat from beef or game, stews and mature cheeses.
The Negroamaro grapes come from different municipalities in Salento. The terroir consists of calcareous clay. The winters here are moderate and the springs and summers very dry. Grapes are harvested strictly by hand, the bunches are carefully selected and subjected to a traditional maceration of 10-12 days on the skins, during which the must is fermented at a controlled temperature. Alcoholic fermentation is followed by malolactic fermentation. The wine is aged for approximately 6 months in French oak barriques and then the wine is aged for another 2 to 3 months in the bottle.
