The color of Primitivo del Salento is deep red, bright and intense.On the nose it has intense aromas of ripe red fruits such as cherries, mulberry, blueberries and aromatic herbs and vanilla.A wine with a strong personality that is persistent with pleasant tannins and a soft aftertaste.
The vineyards of this Primitivo are in the center of the peninsula in Salento.The terroir consists of calcareous clay.The winters here are moderate and the springs and summers very dry.The grapes are harvested strictly by hand when ripe, the bunches are carefully selected and subjected to a traditional maceration of 10-12 days on the skins, whereby the must is fermented at a controlled temperature.Alcoholic fermentation is followed by malolactic fermentation.The wine is aged in French oak barriques for about 6 months and then the wine is aged for another 2 to 3 months in the bottle.
